Faery Cakes




Faery Cakes
Topped with sugar, the cakes Mr Tumnus serves Lucy during her first trip to Narnia are finer and sweeter than the wheat and oat cakes eaten at suppers and High Banquets. These cakes are soft, light and elegant.They're quick and easy to make, and children enjoy them. The tops can be decorated with your own personal touch if you like, such as berries, slices of other fruit, or a light glaze.

1/2 c. butter or margarine, softened
8 Tbsp.white sugar
2 eggs
3/4 c. self-rising cake flour
4 Tbsp. milk
1/2 tsp. vanilla

Cream the butter and sugar together, then add eggs and vanilla. Fold in the flour carefully and and add milk if the consistency isn't soft enough. Spoon mixture into 12 paper-lined cupcake cups and fill them all equally. Bake at 400 degrees for 15-20 minutes, or until the cakes are golden on top. Remove them to a wire rack to cool. 

Faery Cake Frosting
An easy homemade buttercream frosting for the top of your cakes - entirely optional.

1 1/3 c. butter
4 1/2 c. sifted confectioner's sugar
2 Tbsp. milk
1 tsp. vanilla extract    

Start with a large batch and remove a few spoonfuls at a time to a smaller bowl, adding drops of food coloring if desired.
